TERROIR Clayey and sedimentary hills at 300 meters of altitude. GRAPES Grechetto (min 60%), Chardonnay, Trebbiano Toscano. WINEMAKING The grapes are selected and hand-picked, then gently pressed and separated frm the skins. The must is cold-decanted. Fermentation in stainless tank. A 10% of grapes is macerated in contact with skins for 16 hours and then fermented in french oak barrels. MATURATION Steel vats. Malolactic fermentation. FINISHING 4 months in bottle. FEATURES Straw yellow, white flowers and butter aromas, lean and fresh on the palate, persistent. Medium bodied. PAIRINGS Raw fish, risotto with zafron, international recepies.

TERROIR Clayey and sedimentary hills at 300 meters of altitude. GRAPES Grechetto (min 60%), Chardonnay, Viognier. WINEMAKING The grape-clusters are soft-crushed and immediately skinned. Static decantation. Fermentation in stainless tank. Selected yeasts. 10%/15% of the wine is cold -macerated and 5% comes through carbonic maceration. MATURATION Steel vats. FINISHING 2 months in bottle. FEATURES Straw yellow, sweet yellow flowers aroma, warm and mineral. Medium bodied. PAIRINGS Appetizers, sauced fish and seafood, elaborate pasta dishes and white meat.

Cold settling of the must for cleaning. Temperature controlled fermentation (max 18 °) for an average of 12 days in stainless steel vats. Static decantation and fermentation in stainless tank. The wine is then filtered and stocked in stainless tanks and finally bottled. MATURATION Steel vats. FINISHING 2 months in bottle. FEATURES Yellow green with straw hints, white flowers aroma, fresh and mineral. Light bodied. PAIRINGS Cheese, fish, seafood, white meat and pasta dishes.
