NERO DELLA CERVARA - Umbria I.G.T.

TERROIR Hilly volcanic terroir with sedimentary and rocky soil. GRAPES ​​​​​​​Merlot 50%, Cabernet Sauvignon 25%, Cabernet Franc 25%. WINEMAKING 12/15 days of maceration on the skins. Several racking and “bleed off” of about 20% of the wine in the beginning phase. Alcoholic fermentation at a controlled temperature (max 25°C) in stainless steel vats. Malolactic fermentation made in barrique. FINISHING 12 months in the bottle. FEATURES Dark ruby color. Mature red fruit flavor with elegant scents of black pepper, tobacco and dry flowers. Full-bodied, tannic, smooth and elegant. PAIRINGS Suggested with grilled red meats, game, roasted and braised meats. Serving temperature: 20°/22°C.

TERROIR Clayey hills, sedimentary with shingles. GRAPES Sangiovese, Merlot, Cabernet Sauvignon, Cabernet Franc. WINEMAKING 12/15 days maceration. Mixing process and pressing. Fermentation in steel tanks. Malolactic fermentation. MATURATION 15 months in french oak barrels. FINISHING 6/8 months in bottle. FEATURES Intense ruby red. Black currant and pepper aromas with notes rosemary. Tannic, bold and intense. Final notes of vanilla and tobacco. PAIRINGS Blue cheese, roasted red meat, game meat.

TERROIR Clayey and sedimentary hills. GRAPES Sangiovese (min 60%), Merlot, Cabernet Sauvignon. WINEMAKING 12/15 days maceration. Various adjustments and a 20% dehydration in the initial phase. Fermentation in stainless tanks (25°c). Malolactic fermentation completely carried out in stainless tanks. MATURATION 6/8 months in french oak tonneaux. FINISHING 4 months in the bottle. PAIRINGS Aged cheese; grilled, roasted and braised meat. CARATTERISTICHE Colore rosso rubino profondo, consistente. Profumi intensi di frutti di bosco e visciole sotto spirito. Vino rosso di buona acidità e corpo, con tannini fitti e densi. Gusto intenso e persistente. Da medio invecchiamento.   ABBINAMENTI Salumi di buona grassezza, formaggi stagionati, primi piatti strutturati, carni alla griglia.
